If I may ask a question, what's the difference between a 'Chuck Pot Roast' and a 'Chuck Roast'? I see them labeled different everywhere, the pot roast seems to turn out a lot tougher for me over the regular 'Chuck Roast'.

I just did one that was 3.54lbs and it took just over an hour indirect at 250-275 to get to 130, pulled it and reversed seared it which took it to 140 which is still medium rare for a Tri Tip. Make sure you let it rest for a good 20-30 minutes after or you will lose a lot of juice.

Hey Jeff, that temp fluctuation isn't normal. once it hits your target temp it should drop to about 48c (120F). I never have an issue with wood chips, I get 5-6 hours of smoke with a full box which is more than you will ever need for just about any smoke.
