i know the pellet hopper on that 7 series is Huge, when at smoking setting it will probably last all day with minimal check-ups unless your into that kind of thing

Not me, but i do work on these units occasionally, have you tried moving the probe in and out, its a pain to get to, i suggest pulling it out to a little over half of standard paper clip with wrench/rather than take out whole hopper :(. (this may help)
i tried to refurbish a unit that was having the same issue, no dice, if its under warranty you know ish happens... control board maybe, fan very possible, the man messing with you is definite. Stay Blessed
shot out to Ravenclan and the MidWest Dub K in the house... just saying i like to use the set ups for cold smoking rather than making something dangerous.
Pit Boss is worth a mention, its solid,pb 820fb, pb 700fb ask yourself what important this will guide you to your grill. (Hint) Close your eyes when doing this.
