If the basic components of rubs are readily available, I'd buy them and make my own. Should be much cheaper, you could experiment with the flavor profile to find what you like, and there's plenty of recipes on here to try.

That's a 70+lb flathead catfish caught in the Wateree River in the mid 90's. That was a long time ago when I was much, much younger. I have caught several 50+lb flatheads, but that's the biggest. We only targeted flatheads because they primarily eat only live fish, they're not bottom feeders...
How long are you leaving ashes in the firebox? Ashes will draw moisture and cause rust. I clean the ashes out of my firebox as soon as they are cool enough to remove and I don't have any rust on the INSIDE. The outside is rusty, but that's a constant battle. An angle grinder with a wire wheel...
That sure looks good. My family history is from the low country of South Carolina and I know all about Frogmore Stew. One thing we would do is put beer in it, PBR to be exact. Probably about 50% beer and water, but who really measures? :emoji_laughing:
I would replace the wiper for better temp control. I have one of mine marked in 1/8 increments to control temp and have found that half open is about equivalent to fully open. I typically run mine almost completely closed (just a sliver open) and the exhaust vent fully open to get a cooking...
