A friend of mine asked me to smoke three dozen jumbo turkey legs for his sons graduation party.obviously i have to cook these ahead of time, because i have to be there early to set up a spit for the whole hog.
Any advice how i should do this?
Should i smoke them and finish and sauce them on...
Thanks guys. I can't even describe the flavor. Like I said I have had a lot or steaks in my day,but that was the best ever. I will alway cook it that way from now on.

I felt like a little surf and turf last night. So I fired up the smoker. I did the shrimp Jeff's style (with my rub),and I did a reverse sear on the steak. I have been to a lot of steak houses,but I have to say this steak was cooked to perfection, and was by far the best steak I have ever had.
Albacore tuna it would be.I grill it a lot and its amazing.just wondering how it would be smoked.Dave every time you barbecue ,you just got to have a cocktail or two,or three.....
Hey Dave,thanks for the response.ya i know cod is delicate.I usually cook it in parchment.im not a big fan of salmon.what do you think about smoking tuna?
