There's some good deals to be had on Craigs list, just have to keep looking. Seems like on Ebay, some people get in a bidding frenzy and pay more then they could have gotten new.

Looks like you've got that smoker real estate maxed out. I would like to try the ground meat jerky, but I would either have to get a jerky gun, or an adapter for my stuffer. With the regular jerky, I have to carry "Plakers" with me!

Well, I made one of these last week and it was so good, I had to make another.
I started out with a corned beef I got at Sams Club. 3.84 lbs.
I soaked it ice water for 6 hours, with a change in water after 3 hours to get the excess salt out.
Took it out of the water and dried it off...
I'm thinking that at $7.00/lb, you would probably just break even. I used to sell sausage to friends at work, they couldn't get enough of my Slim Jims and Summer Sausage. Made enough to pay for my equipment and for me to eat sausage for free.

Hmmm, seems like it would "taste" exactly the same to me if the seasonings are the same, just different how you like to eat it. I like the smaller casings so I can put it in a bun if I want. To each there own I say!!
