I am doing a shoulder instead of a but, just to try it. It is barely 40 degrees here in Raleigh with alot of wind..I have been able to keep the smoker at 240-50...but after three hours temp is only 110...is this too long in the danger zone? it was about 35 when it went in
Cookin some this weekend myself, and had already decided after the last batch of St Louis to cut the time..what temp did you run at for the first 4 hrs?

SQWIB - What a great tutorial....although I didn't see this until after I had brined it for 13 hrs ( 13lbs) , it was good to see my Brine recipe was like yours except for the wine...and I used pure maple syrup instead of sugar. But I printed out your whole post and used it as a gude as I smoked...
Did a few more Mods a few weeks ago on my CGSP SFB...seemed ok, but I used this crap charcoal from Gander Mountain, mut have been mosit or something, could hardly keep it going, consequently my smoke took forever...food was still good though

Eric - thanks for all your timely advice and thoughts. I had a water pan in the chamber, and temps stayed around 235-240.....but a little spiking before it settled down. Like I said in my earlier Post it got to 160 IT in 4.0 hrs...that was too fast for 7 lb flat...Next time, keep temps down to...
Final results! Burnt Ends( first time) were a hit! I Flat was tender, but I was dissapointed on lack of smoke ring...it seemed to get to foiling temp too quick, even though temps were only 235...
Oh well, next time!
