Do you know what cut of meat you used? Some cuts may not pull apart as well as others. Also, what most people call a butt is actually the pigs shoulder.
I like the size of those. Normally, I buy 5 gal pickle buckets from Firehouse Subs. They are only a couple of dollars and they come with a lid. The money is also donated to local firehouses. The problem with the Firehouse buckets is that I have to clean out one of my fridges to fit it.
I used a thin cheep pizza stone on my first attempt. The pizza bottom burnt to a crisp. I have a couple of thick pizza stones now and they work much better.
If you do decide to soak them its easier to put them in a Tupperware container than in a zip lock. They wont turn colors as long as they are covered in water and refrigerated.
