Did a pair of chickens today on my Pit Boss . Cooked em hotter then a usual smoke . Ran them at 350 for a crunchier skin hopefully . Dinner isn’t for couple hours yet though . I also injected both birds with creole butter . I’ve enjoyed it many times with chicken and Turkeys . I’ll post up how...

I'm just curious , I'm cooking a pork shoulder on my PB700 right now and just want to mention my temps are holding pretty good between the dial, LED, and my TP-20 ... I have had the temp spikes as mentioned above and usually do on a long cook but they always seem to come back down to temp...
Just ran across this thread, I too have converted to vacuum sealing after decades of freezer bag / water combo.. I cant say we notice a difference in the thawed product either. I like sealing for the simple fact of very clean stacking in the freezer.. Also a tip i was shown on sealing... Don't...
I just let it ride, I contemplated foiling it around 180 because it seemed to stall there, but that wasn't mentioned in Al's instruction ( foiling ) so i just rode it out.
Thank you, It took about 7 1/2 hours set at 225 to get to 203 IT..... It was very hot in North East Ohio yesterday, so my rig seemed to be running in mid 230's - 240's a lot of the time though. I just let it push through and not mess with Temps or anything.

I did it and it came out great . Barely enough left for my work lunch tomorrow . Thanks for the tutorial . Helped me big time do this 6# flat with confidence for cookout today .
My Pitboss 700 smokes heavy for about 5 minutes at start up, once the cycling starts its not nearly as much smoke coming out as start up. Past the start up, I would think you would be ok for apartment balcony smoking..... Depending on how touchy your neighbors are I guess.
