Welcome and good luck on the search. I have the Char Griller w/side fire box. I have used it with wood only, charcoal only, and mixed. It is pretty versatile and reasonably priced. And this site is full of ideas for mods!!!!!
I guess fire bricks would also serve the same purpose? I have been thinking of trying them in my Char Griller, as it is really tough to get the temps up in cold weather in it.

I also have a Kenmore 4-burner gasser that I've had a while that I now only rarely use. I have also done some campfire cooking and just enjoy messing around the kitchen in general. I have also done some home canning and can bake a mean pie with homemade crust.
I would probably try some kind of wood and gas combo. The CG struggles in cold temps to maintain heat and I think the option of a gas assist would be nice.
