Mark doesn't call them "trimmings". To him (and many others) they're called "samples".

If the exhaust is placed at the highest place in the cooking chamber, some fear the smoke will never get to the cooking grate. They believe (I'm one as well) the smoke will rise straight to the top of the cooking chamber when entering from the fire box, travel directly over to the exhaust pipe...

    Smoker repair question?

Flexing once it heats up makes me think epoxy may not be strong enough to hold the patch. If it is getting that thin, perhaps taking it to a competent welder would be a better choice. The repair may cost a bit more, but if you like the smoker, this type of a repair will last much longer...

Jambo Pits. Why not Reverse Flow?

Cooker choice ranks right up there with politics and religion. Each design have positives and negatives--it's up to the individual to make things work out for great BBQ. It gets back to being more than one way to skin a cat. As far as comps go, it seems the pellet smokers are the ones usually...

    Stuffed pork tenderloin w/ Qview

Looks really great! After about ninety minutes, I usually cover the pan with foil. (It has enough smoke already for my tastes.) With the sausages in the middle and the bacon on the outside, it should stay really moist. I can't wait to see what it looks like when you slice one open!

How Much Do You Spend on This Hobby?

Are you implying he may have to resurrect the "different kind of smoke" thread again? If he does, it won't be the brush burnin'!

    Need opinions on a smoker?

^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^^ WHAT WILDFLOWER SAID! Make payments to yourself. If what you have isn't big enough, go buy a lower end smoker from one of the chain stores to get you over the hump. The way that thing looks, you'll be trying to figure out how to get it to work right for...

    A-MAZE-N SMOKER trial run

That's a pretty interesting gadget you've got there. What are the dimensions of it? Are the dividers mesh too, or are they solid? How many more rows would you have to have to get--say a ten hour smoke? Is your fuel more sawdust than chips? Did you soak them (I'm assuming not)? Do you have an...

    Smokin' Red Dirt

I had the chance to go by the comp for a bit this morning. There are 75 teams competing this year. They would more than cover a city block if they were all on one site. It has been cool and dry so far today, so it is helping with team morale. I took a bunch of pics of smokers and (what I...

    Opinions on CL pull behind

Either looks like they will work, provided they aren't rusted out. I don't like the looks of all the rust in the first one. Hopefully, they washed it out with a pressure washer and didn't season it afterwards. If not, I'd want to figure out why it is so rusty in the smoking chamber. How much...
