My hickory wood was way too dry. The meat smoked in the foil pans is WAY better than the two I cooked on the grates. It's hot in there!

My 8 butts are in the smoker as of 10 AM central this morning. Two butts near the flue not in pans, just on the grate one fat up, one fat down. I put the other 6 in pans some fat up some fat down. I covered the pans with foil and make like a smoke alley by doming up the foil with openings on...

Nice. Did you cover it or anything in the smoker? I have aluminum pans like that but I was considering covering my meat with aluminum foil loosely so that the smoke still gets in but won't dry it out. ??
Thanks a lot guys! I'm a bit overwhelmed but I'll figure it out! I've got my hickory wood stacked nearby with some oak plank scraps as well. My plan is to try it next weekend - June 6 - 9. Really excited about the fire!!
