Too many ribs... Fridge or freezer to keep them for ~11 days?

So my wife went to Costco today to pick up ribs for the weekend. Given that it's basically just the two of us (and maybe a rib or two for the 6 yo), I told her to get two slabs. I figure that's enough to have some leftovers. She bought two packs. Six slabs total.  No biggie -- we just have two...

Initial Setup and Using the Masterbuilt Vertical Propane Smoker

I'm also pretty much a novice, and picked up the Masterbuilt GS40 at amazon. It was $159 when I bought it about 4 weeks ago, seems to be $195 now. Check around and you might find a deal. Amazon does have a cover and a cast iron pan that they recommend to buy with it. I bought both for a total...

    Never quit (Brisket)

I'm just envious of your trimming skills. When I trim I end up with a bunch of scraps of fat, not a nice big layer like that!

    The Continuous Reverse Sear Thread!

Thanks, Eric. These are the two primary options I was looking at... Obviously the Bayou Classic is a lot larger, and heck, for the price I could *almost* get two Lodge's.  I'm just wondering if there's a good reason to go either way.

    The Continuous Reverse Sear Thread!

So I most definitely want to try this, for both steaks and burgers. To do so, I really think I need a cast-iron griddle. (And let's face it, who doesn't need an excuse to buy a griddle?) I homebrew, so I have some pretty strong Bayou Classic propane burners that can apply some SERIOUS heat if...

    Brisket Prices...Am I Crazy?

I picked up an 11.5# packer, USDA Prime, at Costco for $2.79/lb about 3 weeks ago.  My local butcher, a very respectable place, only had Choice for $5.49/lb. I think Costco has been making some huge strides over the years with their meat selection.

    New SoCal Smoker here...

Nice to see all you SoCal folks... Going to Lucille's for Q just doesn't cut it anymore, huh?

    New SoCal Smoker here...

Hey, all, I'm new here! For years, probably ever since seeing the first Good Eats episode with Alton Brown and his terracotta flower pot smoker, I'd decided that I was going to start smoking meat.  Unfortunately, unlike what I did after I saw his homebrewing episode, I did not immediately go...
