I do get some nice bark, but mostly I'm lazy. It depends on what I'm smoking as well. I do use water sometimes when I do a turkey. As far as foiling, I do highly recommend that with most cuts, as it does wonders retaining juices. Just my opinion. I'm a fan of the "Texas crutch".
Those look wonderful, but so far above my energy commitment, I need a nap just thinking about them. I'll just have to enjoy from a distance.

Just got the Maverick ET 732 for pappy's day. I was absolutely god-smacked that I didn't have to wade through 3 or 4 languages to find the right directions for a born and bred Americano. Kudos to the Maverick manufacturer for that.
