Same exact situation with the charcoal version. I drilled some holes in the charcoal pan because I had issues sometimes getting to temp and staying there. I guess that was my first smoker mod. lol
I definitely remember those and they offered a charcoal one with the bottom coal pan, I think it was the Cajun smoker. The one I have is an open bottom with 3 legs, the lowest tier model good money could buy.
You should toss something in there for fun!
I must admit the quality of the material used to build it are high. Almost no exterior rust on the chamber and just some surface rust inside the chamber. The fire box is a slightly different story but still serviceable. The wall between each chamber is getting bad.
I cut loin chops from whole loin several times a year, season them various ways and vacuum seal them 4 per bag. Perfect to pull out of the freezer and straight in to the water bath.

Someone mentioned it already but yes, put the chunks somewhere in the firebox where they will get hot but no combust and as needed move them to the coal bed, replenish the cold wood as needed to keep a supply of hot wood handy.
Another option is to get an open pit, burn a "camp fire" in it...
Looks delish, I'd chow! Something I definitely prefer to do on the Camp Chef double burner, it's a messy/splattery (is that a word?) affair so I don't envy you doing it inside. Also, outside a little smoke won't ruin time in the house :) but Rain so do what you gotta do.

Here are a few things to check.
Is the soil depleted?
Is it root bound?
An imbalance in fertilizer? Reduce nitrogen and increase phosphorus.
Insufficient sun or crowding?
Pepper plants can decline after 3-5 years, consider rooting some clippings to replace it.

Blanched the bok choy, sautéed garlic and fresh ginger in a neutral oil, once fragrant added the gochujang and bok choy. A few moments later added a slurry made from soy sauce and corn starch. Continued to agitate until it reached a simmer and thickened. Remove from heat and serve.
