I think our daughter is going to turn in to pork belly! I can tell when I make something she really likes, she'll eat it exclusively for breakfast, lunch, and dinner until it's gone. I'll need to reserve some so I have a little.

Smoked this belly slab today with post oak, ran the offset around 300°f for about 4 hours to get here. Picked this up at WinCo.
A bit of a different approach, I used fajita seasoning, cayenne pepper, granulated garlic and black pepper...
Results are in, it is interesting. I'll rank them by flavor and aroma. I think the higher quality the vodka, the better the results.

I think you are right, I am just normally content to be lazy and hands off until it's done. As little as it is - it's a pain to pull it, wrap it, and stick it back in. I know, that's pretty lazy. On some occasions like this one I was very short on time.
My freezer is full, I'm struggling to find room for the 1 lb bags I'm sealing tonight. I've got a buddy looking for a larger chest freezer for me, then I can smoke even more and fill it up in about a week. Oh, and the wife, she'll sniff out those sales.
That's awesome, we have a place on 40 acres in an undisclosed location (Ozarks) and have those guys. We have also found Golden Oyster mushrooms. We've been working to up our game with the wild edibles of all sorts. Sumac "lemonade" is on my list, and we have tons of black berries.

The Montreal seasoning on top of pork run really builds up the crust and adds that "something extra" the the flavor. I'd give it a try.

At this point it's mostly dissolved, the color is vibrant and the vodka remains crystal clear. The grape however is not vibrant like the others.

We use it for making vanilla extract and the like but no way it's going down the hatch, we're a little old for that!

I wanted to add, I got away doing the corn tortillas the way I did due to extreme patience and the fact that they were bought fresh and hot ( a different beast ). The absolute best way to prepare them is a quick dip in hot oil.
We figured there was virtually no chance it's bad. I'm curious which one strikes me best. There's a chance cherry tastes like cough syrup. I'm thinking I'll like apple, blur berry, and water melon best. Tick tok...
