    NEW ADDITION TO THE FAMILY

Sometimes ya just got to wonder if it's "fate" or just dumb blind luck you're having. Case in point, last month my wife and I were discussing the fact that for over 40 years we have always had a dog in our household. Ya know that strange empty feeling when you've been dog less for three weeks...

Christmas in August - New Griddle - Qview

I just mentally stretched that out to 60" and had flash-backs to my days slinging hash in the mess hall at breakfast. Martin

    Careful with overnight smokes!

That's horrible. I've never tried an overnite cook before mainly because I'm general up by 0330hrs. I think I'll keep it that way.

    6# Chuck w/pics.

I want to thank you for the suggestion. I did consider pulled beef sammies but w/ all the pulled chicken, pulled turkey and pulled pork sammies I've been eating lately, I wanted something on my plate I had to slice.:emoji_wink: Martin

    Picked up a Craigslist Slicer

I too have an old Globe slicer. Works great BUT it take 2 men and a boy just to move it.

    6# Chuck w/pics.

Since I'm planning to smoke my 1st brisket for Labor Day Weekend thought I'd better try a smaller chunk of beef. Yesterday I bought a 15# brisket, 6# chuck, 10# butt and a 6# pork loin, and several yard birds, enough for left overs. Last nite I sprinkled a little salt and pepper on this 2" thick...

    Okay, you have convinced me...

Planning to try a naked low-n-slow with this little 6# chunk of beef today, just salt and pepper.

Thank You Thank You Thank You to Smokin Al

I'm glad you were able to salvage your ribs. And yes, I ALWAYS cook by temp. Out here in the boonies, my Pit Boss has been knocked off line several times by a blink-out of power. I hope that's all that happened to your pit.

    Okay, you have convinced me...

Thanks for your follow-up, pretty much what I was thinking.

    BLT's (EAST TEXAS STYLE)

That's not a BLT. That's a bloody tossed salad w/ bacon. Just kidding. That looks fantastic even with the mayo. Just waiting for my next batch of maters to come ripe.
