I'm pretty new, and was wondering the same thing. I'll be doing some chicken this weekend too, and I have an MES40 with a top temp of 275. So I plan on having the grill hot when I bring the chicken out of the smoker, and crisping it up on the grill, and maybe then applying a glaze of some sort...
There was a segment on one of the Hospital TV shows on this recently. After I saw that, I realized that I bit down on a wire from a brush a few months ago, that had broken loose and attached to my burger. I was lucky, but I canned the wire brush and went and bought a stone the next day.

Like a lot of you, my first smoker was a Brinkmann Gourmet Smoker - charcoal. Used it for a few smokes years ago, but because the temp was so hard to control, I gave up on smoking and just used it for grilling. Just now getting back to smoking but use my MES 40.
I plan on going to the Beach, Boogie,and BBQ event here in Myrtle Beach that weekend, but will definitely put something on the smoker. My wife is after me to do a Turkey, but my boys want ribs. So it will most likely be one of those, or maybe both!!
