    HORROR!!!!!!!!!!!!

Whoa...thanks for posting. We have some strong winds on occasion and even though my MES is somewhat sheltered, I think I better secure even more.  Sorry to hear about that, but hope it is ok.  I'm with Smoking B, I don't think I could wait.

    smoking in the rain

I've never used mine in the rain, so I can't speak from experience. But with the electrical components, as well as the electronic controller, being exposed to water, I would be very reluctant to have mine out in the direct rain. I have a 10' pop up tent that I use over mine if the weather looks...

    Smoking Newbie Needs some input!!!

Right, if you want it sitting directly on the rack, then you can always put the foil pan on the rack underneath the butt, to catch the drippings and help with clean up.  It's one of those things that just comes down to your comfort level with cleaning, etc. No real right or wrong way to do it. ...

    Smoking Newbie Needs some input!!!

Yes, I inject it just once right before I put it in the smoker. For safety's sake, you should read up on the 140 degrees in 4 hour guideline. In a nutshell, if you penetrate the meat, then you can possibly open it up to contaminates..i.e.: bacteria, etc.  So you should then have the internal...

    Smoking Newbie Needs some input!!!

I agree with Worktogthr, I know some people foil later in the smoke, but I did not. I just let it ride it out. Creates a nice bark on the butt. As for the injection, yes, it is a mixture of Apple Juice, sugar, salt, water, and some Worchestershire Sauce. I don't have the proportions memorized...

    hello from north carolina

Hi Stan, and welcome. I was born and raised in WNC, but live in Myrtle Beach SC now. I've only owned the Masterbuilt 40 for an electric, so I can only speak for it. Mine has worked well, and I've been very pleased. Some people have had issues with it, so the reviews are mixed. You can read the...

    Smoking Newbie Needs some input!!!

Hi Josh...and welcome to the world of smoking!!!  I'm fairly new to smoking also, but can share what I've learned so far, for what it's worth. Everyone has different methods and tastes, so you will get a variety of advise, but it will all be good. Just practice and experiment. One thing I'll...

    Cleaning Tips for the MES

Yeah, shouldn't have let mine get that way, but it is what it is...but if I can get it clean, I won't let it get that bad again..   Humm...yeah, a razor, didn't think about that. I have some heavy duty paint scrappers that would work well...thanks for the idea.

    Cleaning Tips for the MES

Thanks for the tips, Bearcarver. Since my window is a mess, any advise on what I can do to at least make it at least semi-transparent?  lol....   But seriously, I would like to clean it up. I was afraid to use anything too harsh on the window. I was thinking about soaking it good with something...

    Rib Rub???

I use a homemade rub, very close to the the Big Bob Gibson rub. I just tweaked it to my liking. I would like to find a really good commercial rub to try, so I'm really interested in this thread.

First attempt at using a smoker! (advice needed - brinkmann gourmet charcoal)

The Brinkmann was my first smoker, years ago. It's been a long time, so don't know how much help I can be. But from what I remember, I had a lot of trouble with mine maintaining temps. But with some monitoring, I had some good smokes from it. I agree with everything that DanBono had to say. I...
