I sent an email on 9/19. Then I got busy. Never did a follow up or push for a reply. I think I'm going to be pleased with the WSD from Auber.
I had a MES-30 I loved except when I tried to do brisket. I like the wideness of the MES-40. I like the cross flow ... although I'm grooving on the...
I recently purchased a MES-40 Model 20070512 from Amazon.com I mainly smoke pork butt, ribs, and brisket at 225F. My experience has been the smoker runs 25 Deg F less than the setpoint.
I use an iGrill with two probes. I checked the probes in boiling water. I live at 3000'. Probe 1 read 206...
The two basic ways to control temperature to a set point. On-off control and continuous control.
A great example of on-off control is the thermostat on your air conditioner. You set a temperature you want for the room. If the temperature gets far enough above the setpoint, a relay closes and...
I'd call my MES-30 the in between generation. It has the window I don't bother cleaning (I smoke to temp, not looks) and the digital controller on top/rear with a remote. Door opens on the left. The "older" model had no window and an analog controller. The "new" generation has larger window and...
Shot my mouth off and my son is taking my MES-30.
I've been reading the MES-40 threads.

So the winner was I used your suggestion, found the pan on the net, and when I knew what I wanted found it on Amazon.
It will be here in time for the weekend smoke!
That looks like the same one I posted from Amazon. The 1/2 bezel around the pan means it will be just a little to long to fit in the MES-30 unless I do some metal work. I can, but want to buy the answer if I can, not make the answer.
However, I do see a nordic pan that might work.
We've found a bean recipe we love to smoke: http://www.bbqu.net/recipes/305_2.html We like to smoke this for 2 hours, then finish in a 350 oven to reduce the liquid.
It completely fills a standard 9x13x2 cake pan. I started using an aluminum pan after the foil pan I was using collapsed and I...
Pops ... you called it. Excellent smoke!
After about 5.5 hours in the smoker it looked like:
Let it rest for a while, then "Oh boy! It's supper time!"
Karol made a nice spinach / avocado / pear salad. I sautéed some mushrooms / onions and the meal looked like:

So there I was walking past the meat counter and I heard ... "Hey Don. Wouldn't you like to smoke something for Memorial Day?" I spun around, but didn't see anyone. Then "Hey, stupid, down here. I'm a pork roast." Surely I'm not the only who hears things like this? Any way ... it looks like a...
