You really need to get a probe type meat thermometer to determine the internal temperature for whatever doneness you are shooting for. Are you wanting to slice the meat, or intend to pull it (as in pulled pork)? I don't know anything about the Smoking...

Looks good..... If you are like me - you will love the MB Dual fuel. I made a couple of mods to mine..... But even with my lack of skills in the engineering and construction department I think that everything came out well. :yahoo:

I personally like the Maverick ET 733 (or the ET 732) models. Let's you check the temp of the smoker and the meat all at the same time. A bit pricey....but very accurate, and worth it not to mess up a nice piece of meat (or should I say a $$$ piece of meat) at today's prices.!!!
