    4-5 beers, or 1 whisky and coke.... Seriously, I just go by the size and how hungry I am, but never slice earlier than 15 min. for tenderloin or 1 hour for 5# chucky (wrapped and in a cooler).

    I put the can with no bottom in it in the center, then put the lit charcoal from my chimney in the can and then pull the can out with the bail I rig on it.  Waalahh, easy minion method.

    UDS smoker problems

    Nice looking build there Bill. I'm not an expert, but I would raise the legs on the basket to 3 in, also I'm thinking the basket should be wider than taller. Here's a pic of mine and I get better than 16 hours out of a basket. Hope this helps.

    Just about 3 lbs of tri tip, marinaded in worsty and Montreal steak seasoning. Baby Taters and Brussels Sprouts, butter and PaPa's Stuff Into the smoker it goes, drilled a hole into the side and used a lamp repair kit to  put my maverick probes in. Works slicker than snots on a door...
