I will try it out this weekend. Last question :) Do you notice a significant increase in cook time when you cook on both grates? I figure as long as air can circulate (ie you are not blocking the air on the lower grate, then the meat will cook fine.

Hi all, I may be flying to Raleigh NC in March and am hoping you can recommend your favorite BBQ joint. It will be my first time in Raleigh and my first time back in the US after I fell in love with smoking meat.

Is it just that the ambient probe is not pointed and comes with a grill clip? vs the pointed pro meat probe without a clip...

Thanks for the tip! I picked up some heat shrink but it was the wrong size (whoops) will get a bigger one.
Was wondering though if the heat in the smoker will be too hot for the heat shrink? Or based on your experience the heat shrink can withstand it?
