    Tonights dinner, tri-tip and beans

Smoked another tri-tip today along with some beans. The tri-tip was rubbed with Spade L Ranch seafood rub, I know what your thinking seafood rub? They make a great tri-tip rub and the seafood rub, the only difference is MSG. The seafood rub has no MSG in it. This is a really good rub and if you...

Should I slice or pull my first chuckie?

If you plan on slicing one then dont take it to 200-205, I believe people go to like 150 or 160 to slice depending on how you like it. The only one I have done we foiled at 160 then took it to 200, there was no way you could have sliced it. It basically pulled all by itself, was so yummy though...

My best friend died, he was the reason I got into Smoking!!!

Sorry for your loss eaglewing, my condolences to you and the family. I think you will be honoring his legacy if you break in that new smoker in memory of your friend while raising a glass to him as well. I will raise a glass to him as well later tonight, when I am not at work.

Food Network Going In The Tank

I have to agree, although others in my home would not. The fiancee and kids like Ace of cakes, I cant stand it. I did like Americas worst chefs though, I found it to be funny, how can anyone possibly cook that bad? I seriously think my pointer could cook better! I used to like Chopped but I...

first ever smoke. $5 pot roast

qview = pictures of your smoke TBS = Thin Blue smoke, what you should see out of the vent not white and billowy smoke. Just remember times are a guideline in smoking, there are no hard set times. Temps are when its done for big meats (briskets, chuckies, butts etc..) feel will determine your...

Ribs for the masses? suggestions welcome...

Yeah your plans sounds good, just make sure you keep you temps on the gas grill 225-250 like rbranstner said and dont loose track of time. I had a part time job a while back cooking for the national guard here in Boise, we were feeding all the troops getting ready for deployment. Up to 800 per...

Thanks mballi, thanks for the tips too! Thank you labongio, you chuckie will turn out awesome I am sure. Post the qview when you do it too please! The temp was about 40* F, but it was sunny and windy. It would have probably been in the 50's if not for the wind. You should definitely try one...
