You will be in my thoughts and prayers as well Ron, I had to get my appendix out a couple years ago. That was the only surgery I have had so I can relate to the scared part and I had to go it alone as well. You will come through this better and stronger for having done it and be around longer...
Nice job on the first smoke, your hooked now and with better weather it will only get better! If you can overcome those kind of adverse conditions to smoke then you are well on your way to being zen and the art of smoking! Nice job and qview, keep up the good work!
Thanks for the reply Meat Hunter, I went by the Homebrew supplies place I got my kit at and picked up the funnel and a few other things I needed as well. While I was there I asked them the questions that I had, response was very close to yours. I dont know if this is a partial mash kit or not...
I have this same smoker, though mine isnt stainless. I have many of the same issues as you and find smoking to be frustrating at times. I have come to keep a spay bottle of water next to the smoker at all times for the flare ups. I have noticed that soaked chunks dont seem to flare up as bad...
Oh man those are some good looking pies! Very nice! So you smoke at 250 with cherry and maple, about how long or just wait til it gets all nice a done looking? Very nice work, I am going to be trying this soon.

Thanks Steve! The beer is Leinenkugels Sunset Wheat, very tasty! I love the Blue Moon though, that is one of my fav beers. I think the fiancee got a little burned out on it though and she bought this one knowing that I like it as well. If you havent tried it you should its good stuff!! I...
I foil at 160 also, I would say that if you didnt foil then they would be a little dry. I would also suggest something like hickory or mesquite to smoke them in, beef can take the flavor and hold up to it, apple is a very subtle flavor, that is just my personal taste though. I would also...
Thanks Wingman! I will refrain from mentioning that I also got all my home brewing supplies on Friday. Before long I will be drinking my own beer and eating something I smoked, that is going to rock!! You would have only had about an 8 hour drive to get to Boise....LoL!!
Thanks delta!! Love...
Man that is funny I was driving home the other night and there was a semi on from of me with a trailer full of 500 gal propane tanks all stacked up on it. I was thinking to myself that it would make a sweet stacked smoker, like the double drum ones only lots bigger! Hahaha, glad to see I am...
Very nice work Wingman! I am doing some ribs tomorrow, first time on the smoker, and I hope mine come out close to being as nice as those look! We really like the Sweet Baby Rays sauce, as far as bottled sauces go theirs is pretty good, I may have to try it doctored up like you did though, that...
