    Angusl, You're asking the right questions. Unfortunately in my limited experience I've found that it's pretty much trial and error as each of us has found different things work better or worse.

    So so good. Reverse sear works so great. I did 2 last weekend. No pictures though. One got soy sauce with garlic and onion powder, the other got teriyaki sauce. Both came out perfect. Different but so good.

    Shopvac out all the ash. Someone here once recommended the 5 gallon bucket top vacuum you can buy at home depot or Lowe's, but I already have a shopvac so that's what I use. If you're looking for protection from burning embers that's a different story.

    Looks great. My pulled pork usually takes me 12 hours or more with a big butt. I've considered slicing it into smaller bits to see how much time I can save. There's also the added advantage of having more bark too... yummy yummy bark.

    There's loads of opinions on the matter. I personally subscribe to the idea that steel will eventually rust. Clean it up, scrub it down, de-rust it, repaint it. I read somewhere on here that oiling the outside helps too. The logic makes sense to me, similar to seasoning a cast iron pan.

    Dave, home depot and probably Lowe's sell expanded steel in 24x24" sheets. They're packaged as screen door protectors. Why not just buy 2 and cut them to fit?
