Thanks for the quick reply! I would be just fine with 225* or really anything below 250* With my current set up my temps just keep climbing. Hit around 310* last night while I was smoking some chicken breast. Tried messing with the tank valve but that was such a pain and constantly needed...
Hey @cmayna I was doing some research and have some questions for you if you don't mind. First, how do you like the needle valve mod? I already ordered one but can I really get temps around 220*? How about blow out?
And your smoke stack, is there much affect? I was smoking some eggs and noticed...

The Mrs will sure appreciate that, she yelled at me the last time I did ribs, told me to watch the spice. She thinks salt is hot! OK not really but you get my point! That rub does sound good, and it looked good on those ribs, I think that might be my next rib smoke!

Time and myself never get along. Every time I get a time table in my head like, I'll start here, it'll cook to here, rest here and then we'll eat here........ proves me wrong time and time again! Guess that's why I keep the bar stocked!

Wheww that took awhile! 17 hours! The spray bottle I was using clogged up so I pulled out some homemade bbq sauce and mixed in my version of JJ's Finishing sauce and what was left from the spritz and used it as a mopping sauce. Turned out really good
