I would not bother trying to weld on more steel...it would be a pain and probably more work than what it was worth..Learn how to cook on it and put a blanket on it if It needs it. Save you money and if you need to upgrade do it in the future.
I set mine and forget it ..I did a biscuit test and it cooked pretty evenly was hotter on the damper side. That being said I do not worry about the temp.
I bought mine at the Kcbs banquet last year in Kansas city. Got a better deal on it and they dropped it off on the way back to Yoder ks. Check and see if their are any trade shows coming up in your area. Maybe you will get lucky and they will be there. They would rather sell one than pack it...
Is this a misprint 18 hours....good grief...seems like a long time. I usually get mine done average of 8 hours. Unless you like to be tied down for that long and just have pellets out the wazoo...crank her up to about 250
On my offset I build bigger fires, but it is large and also is made of 1/4 steel so more heat is needed to heat up the steel. But I do not worry about the white smoke as much after my butts or brisket are wrapped. Some guys also advocate having a separate burn grate and only add coals to the...

Posted pics in my profile of my biscuit test. I do not need to know the exact temp of every square inch of grate. I just need to know the hot spot to use to my advantage and to know if I need to rotate food out of it.
For 30 bucks Yoder sells a cable gland that you can install into your smoker, so you can run probes through it, and it seals up. Far right side is a bit hotter than the left...buy some cheap biscuits and cook them on your smoker. It will clearly show some of the hotter spots. I love mine.
Has anyone used these pellets? I saw them today and was wondering if they are anygood. They are not cheaper than bbq delights or others, so that is not a reason to use them. They do have some interesting flavors though.
Yoder is using what they call cable glands in the hole of smoker for the temp ports. It is used in the non smoker world to seal up cables or wires running into a control box. To keep out water ect. I have found them on amazon or call Yoder they have them for like 20 bucks..
I have no experience in making sausage...and I want to know how much stuff one needs to start...and what is the start up cost of making sausage? I have read some pretty bad reviews on the manual sausage horn type of stuffer..which are cheaper to buy. I mainly want to make the sausage for...
