I did some fairly meaty St Louis ribs yesterday.
Used Meathead's Memphis Dust, with a 1 hr dry brine using just salt.
225 F temp with cherry wood - in my Smokin-It 2D so I know the temp was pretty spot on.
After 3 hours wrapped in foil for 2 hrs.
After 2 hours I unwrapped and did the bend...
Have tried a small water pan in my SmokinIt 2d but honestly don't see much of a difference. Pretty well sealed so the atmosphere inside seems pretty moist. Electric unit is small so I think it makes getting up to temp longer...
I have a townhouse and used to use a Weber tube smoker, which used 5-10 pounds of wood for a decent smoke, and I got a lot of complaints from my next door neighbor. It was a lot of smoke. I did some research and ended up with a SmokinIt 2D which uses a fraction of that. Much better results too!

Well, I had a pretty good size grease fire in my Weber gas grill over the weekend. Serious enough that I ended up pulling the fire extinguisher from the kitchen just in case it decided to spread beyond the grill to the wooden deck it sits on.
Luckily it burned out with me not doing much except...
