    If your probe shows 212 in boiling water, I'd verify your smoker to make sure your cooking at 230  like you think your are.

    The plastic bag is the reason it "rehydrated"  You should store it in the paper bag or even a container with holes punched in it.

    Your masterbuilt 40" is the MES40    MES = masterbuilt electric smoker. And I agree with Flyweed just end the hassle and get a A Maze N smoker.
