First answer, The Big Easy crisps up the skin better then the smoker, oven or gill.
I use a brine in turkey like many others whom have been smoking for 40 years of so to enchance flavor and moisture.
I smoke turkey at 225 until I hit an internal temperture of about 130 or so. A 10 lb turkey took 3 and half hours for this. Than I finish off in Char-Broil's The Big Easy to crisp the skin up.

I smoke with a Traeger 070 and never foil. Smoke at 180 for five hours. Now my family likes sauce so sauce and turn the temp up to 350. Cook until meat recedes back from the bone about 1/2 inch and check for internal temp of 190 or aboue. The second step usually takes about a hour.

I learned this from a Steak House Chef years ago. If you do not have an age room (who has) dry steaks in the fridge for a day unwrap. About 3 to 4 hours prior to grilling add sea salt to both sides. Yes it does make a nice crust. Casual is right, this is out in the sun room.
