baby back rib issue, getting ready to go on the smoker need help soon

Thanks for all your help. I think everything will be fine. I smoked them all up this afternoon and everything looks good. I taste tested afterwards and it was really hard to stop before vacuum sealing them for next Saturday's dinner. Thanks again.

baby back rib issue, getting ready to go on the smoker need help soon

Okay, so I am getting 4 1/2 racks of ribs onto the smoker today in preparation for day after Christmas dinner. I rubbed them all up last night and let them sit in the fridge till now. One of the slabs of ribs on the bottom/membrane side has a blueish tint to it and just doesn't look right...

    Freezing ribs ahead of time???

Anybody done it? I'm looking at making up 4-5 racks of baby back's for Christmas family lunch (day after Christmas). I already have to cook a lot on Christmas day for my wifes family and my side wants to do lunch the day after at my place but don't want to cook all day two days in a row. Was...

    FINISHING SAUCE (for Pulled Pork)

Well shoot... I didn't see this until now. I went ahead and froze them without the sauce (just made it today). I just took the pork out of the freezer a while ago to get them thawed for Saturday's party. I'm sure it will turn out great either way. Thanks.

    FINISHING SAUCE (for Pulled Pork)

Can anybody tell me how much of this I should apply to my two butt's I've got smoked up for this weekend? Together they were around 15lb's before smoked/pulled. Thanks.

Will 15lb of butt produce enough pulled pork for 25 people?

Thanks for the advice. I'll be serving 16 adults and 9 kids so I'm hoping I'll be ok. I think I'm gonna have to live with what I've got either way, I don't have time to smoke up a third butt between now and then. Just need to add lots of side dishes I guess.

    FINISHING SAUCE (for Pulled Pork)

I am smoking up two butts today and plan to use the finishing sauce as well. Question, I plan on freezing the meat after I pull it cause it's for a b-day party in two weeks. Will this be ok doing this with the finishing sauce on the meat or should I wait to put the sauce on it the day I am...

Will 15lb of butt produce enough pulled pork for 25 people?

I've got two butt's in the smoker right now and together they weigh in at around 15lbs. I just went through the list of people for my son's 6yr b-day and ended up with 25 people (includes 9 kids). Now that I counted up the kids I think I will be fine but figured I'd ask anyway. I just don't...

Definitely GUYS. The guys I work with have devoured a whole smoked turkey in less than 10 minutes. Thanks for the help.

What chuck roast for pulled beef?

Awesome guys, thanks for all the replies. Since they do tend to be on the smaller side how much do you think I would need to feed a crew of around 10 guys?

What chuck roast for pulled beef?

Maybe I was reading things incorrectly then. I plan on stopping by Sams again on my way home tonight. On a side note I did see they had a twin pack of pork butts on sale for around $22. I might have to pick up one of them to keep in the freezer for a while.

What chuck roast for pulled beef?

I know I asked this before but it got lost during the crash. Anyway, I'd like to smoke up a chuck roast for pulled beef sandwiches but when I go into SAM's I see multiple different types of chuck roasts (eyes, rounds, etc.,). So I come to the gods of smoke to see which one I need to get for my...

    Suggestions for a good thermometer

Hi all, I'm looking for a good thermometer to tell me the inside temp of my smoker. The thermometer in the door of my smoker I found to be almost off by 100 degrees. I hung a metal oven thermometer from one of the racks inside the smoker but I can't read it anymore with all the smoke residue...
