    Thanks guys for all the comments. I will start searching the craigslist around my house. It seems as if I'm going to be making Bacon and needing a commercial slicer it makes sense to find one even if its a few dollars more.

    Internal Temp is the only way to go.  Once you start using a thermometer and you see how well the finish product is you will be pleased.

    I use fresh just like Bowtech9.  If you want heat leave the seeds in if you want flavor without the heat take the seeds out.  1 pound per pepper is just as Bowtech9 said a good ratio.

    STX meat grinder

    This STX from Amazon is the one I have.  I have been using it for 2 years with no problems whatsoever. It has ground around 500lbs of meat for me and no issue.  Great little grinder for the price in my opinion.

    Grate cleaners...

    I personally use oven cleaner.  I spray the racks and let them sit a few hours then rinse them off.  If I have anything left on them just a rag will remove it.  Obviously I only do this on the racks and the racks are removed from the smoker when spraying. It works great.

    Brazilian meat and black bean stew

    I worked in Brazil for a few years and they made this on the rig every Monday. The beans were good but I would always pick out the snouts and ears they put in it in Brazil LOL
