Both grates are filled with leg quarters top and bottom. Fit close to all 25 lbs. there were a few that couldn't fit, that'll be for tomorrow I suppose haha. I went with the empty water pan just foiled up. I used the coffee can technique to get my heat going. It's definitely better for locking...
The sides are almost as important as the meat around here haha they must be made into masterpieces as well. I'm going to weigh what my end result of meat is. I'll take this opportunity to do some more WSM seasoning. It will certainly run hot, but that's ok for chicken.
That looks quite lovely, and you're right I'm all about the crispy skin. It's a must! Though I'm doing pulled chicken sammies so I don't get to display the crispy skin as I'd like. I'll have some though for sure haha
You guys saved my butt! I was in line at the store with only 15lbs so I jumped out quickly and grabbed another 10. I've been told there's tons of other food so I cut back a little.

This was today when I served the pork. I poured the pan drippings in with the pork and covered with foil then threw them on the grill to steam the drippings into the meat. I mixed one pan with my BBQ sauce and one without. Both were a hit!
In total the smoke time was 7 hours and 10 minutes for two 8.5lb butts. Definitely a hot and fast method that I wasn't planning on, but it worked great. The finished products are below.
