I'm on a roll, my SJS was free from the wife's company picnic. I am looking forward to see the difference between the 2 vent set ups. Just got back from picking up my 2nd pot. Hope I can squeeze in a couple hours this week to put it together.

It took about 2 1/2 hours to get to 165f. I held the temp to about 250 most of the cook. It dropped to 225 the last half hour when I put the glaze on it. I used my 12" plater heat diffuser with foil as the drip pan.
Since I put together my mini and smoked my first ribs, I've been day dreaming constantly of when and what I would do on it next.
Due to that inconvineance called work. Today was my first day to play. I needed something I could do fast compared to a 5 to 6 hr smoke.

It was my first smoke on it. I couldn't be more pleased with how well it works. The ribs came out great.

I like the idea of the side vents. I thought about adding one but decided to wait a use the mini for a while. I see where that could cause some probs.

I just don't trust these legs. I'm also thinking along the lines of rebar legs attached to a ring that the SJ can just sit in. Not unlike a turkey fryer burner.
