i line the 5 gal bucket with a heavy duty garbage bag and use teryaki for the brine. add water between the bucket and the bag to displace the brine so you dont have to use near as much. i brine mine for 3 days. then smoke. the gravy is so rich its 2 die 4.
try justpassingthru's suggestion first. he is correct with the valve advice, also try spraying your fittings and lines with soapy water to check for leaks. gas valves will normally smell of propane however a leak at one of the fittings on the valve may be the issue.
its running to rich. you need to lean it out by either opening up the air gap or installing a new jet. do not poke out the orifice with anything metal. even the slightest enlargement of the jet will make a change in your burn. the "cleaning it" may have been the issue.

you will have to measure by wieght rather than volume. if it is the fine sea salt like i use it will be much saltier. i get mine at a local asian market. 10# for six dollars.
