Al looks like just the right amount of smoke to me. Nice color on the cheese, I think you have that AMNPS dialed in even in the Florida heat. Nice step by step and pictures, I'm saving this post for when I get my AMNPS. Been wanting to do some cheese real bad.- shooter1

Guess I wont be doing any smoking the next 2 days
Although I know better than to ever wish for a hurricane to come through, a near miss would bring some much needed rain and possibly a day off work. Hang in there and hopefully there won't be any serious damage. I think this thing is definitely going to get stronger. -
