Looks like you have enough parts for a UDS already. There is much contraversy about galvanize and smoking. IMHO its so not to use it why do it?
It is obvious you want to do more than cold smoking so I would use the parts that you already have gathered and build something else.

Do you have a remote thermometer? What is the temp of the bird at the thikest part of the thigh? Did you put anything in the cavity?
I think the ribs will be done long before the bird.
Looks good. You may want to alternate your ribs every so often to keep them cooking even. The top rack is hooter than the ones below. You can move your therm around to get a good feel of the temps at different places in your smoker.
Grinding your own seasonings from fresh stuff is always the best.
I had the Kutas book before there was Internet (OK, almost) it is a good "guide" and sheds some insight on a lot of different things.

Ya know what they say, a family that smokes together, stays together. And what the heck when they eventually move on to be on there own they just might take a century's old tradition with them.
As it has been said above, Keep the meat as cold as possible, it will grind so much better.
I also use a separate stuffer, but that is something you can graduate up to.

The needle valve setup works OK, but you have to be careful that the flame does not blow out. IMHO it creates a situation that keeps you next to the smoker monitoring temps constantly.

I like the electric for sausage. I think its a little bit more consistent once its heated up. I did install a needle valve on my setup but did not like the results.
In my hybrid I use the electric element that is controlled with a PID controller fro temps below 175, and propane for 175 up...
