    Weighed in at 7.75 lbs... Temp is reading 191.. Almost been on 10 hours... However opened up a few times for the jerky.. Which turned out excellant.. HiMountain Cajun blend for the jerky... Will get some pictures going here soon.

    To my understanding here in northern Michigan, wood cut and left outside after a few months has a moisture content of appx 25%.... Where the kiln dried wood we use in the shop has appx. 10%... So that might work out alright...?....

    FlaGriller makes a good point.... I haven't heard any hard evidence of needing them for better flavor and I am happy with my food so I think I will just keep er as is..........

    Just finished a smoke on my new cart. I teaching welding at the high school here in town. Been needing a good setup for my little smoker, thought I'd share it with ya'll and hope someone can put it to use. Removable cutting board for easy cleaning. Works great!

    I read that post before fellas, thanks thow has good info... I am not having problems, I just want to know if those side vents push more smoke? Keeps smoke moving more so not pressed in the box as long? Are they only for temperature settings???
