    I would cook/smoke 2 roasts then you know you will have enough. Besides pack the left overs in a vacuum packed bag and freeze. Left overs are always good. Just heat and eat.

    I would choose thick cut with plenty of marbling so your meat will be moist. The butcher and a hotel chef here in Las Vegas told me you want to choose meat for smoking that has a lot of marbling.

    Lack of smoke

    Try different wood. If you like a nice smokey flavor try hickory. I don't use Mesquite much because if just a little of the bark gets in it can make you meat taste bitter. There is only one place I will buy mesquite wood chips from. I don't wrap my meat until I take it off the smoker.

    You need to brine a ham for at least 5 days to go from raw to cured. at this late date I would make a double smoked ham use a regualr ham and inject it with brandy, brown sugar 1/2 cup of each and 1/4 teaspoon cloves.
