    Brisket price

    We tried brisket once and didn't care for it.  I found one store in Vegas that sells Prime and it is an Oriental market called Greenland Market.  Bought some short ribs at $6.00 a pound but they are beauties.  Will smoke those next week.

    We have really good luck ejecting turkey with lemon juice or apple juice and EVOO.  We even did that before we got our smoker.

    Turkey

    We like to inject turkey with apple juice and EVOO or lemon juice and EVOO and spices such as onion and garlic powder.  The acid in the fruit juice tenderizes and add moisture to the meat.

    Skoking corned beef question

    I grind up the pickling spices, juniper berried, black peppercorns, and dried ginger.  Rub the outside with EVOO helps the spices to stick and apply ground spices.  Everybody has their own way of doing it.  No right and no wrong way just your way.  You will evidentually create your own blend.

    Dutch Oven Duck..

    The Chinese dip multiple (many) times or simmer duck in water 1 gallon, 3 cups of brown sugar or honey, fresh grated 2 tablespoons ginger, 1 tablespoon garlic, and 2 cups of soy sauce.  Then smoke Daffy.  I find simmer duck first before roasting or smoking makes it more tender and much less oily.

    I have a recipe that has you marinate wild game in apple beer.  Do marinate or brine the duck first?
