will be smoking my 42 pound homegrown turkey need some pointers maybe ideas

Do NOT reheat whole, an entirely cook, uncarved turkey.  If you should happen to wish to.....the bird has to be brought back up to the original IT.   Not recommended.  Just carve it and use gravy.  Me?  I'm not one for fresh cooked & served turkey.  I'm a left-over man in more ways than one...

Teach myself to weld or take courses at college?

Which ever way floats your boat. .....In the end......it's done.  For that matter, you can even use JB Weld.

    Nitrite plus salt in sausage.

A "thermometer" defeats the purpose of poaching. All the goodness bleeds out. Try it with a banger and it's shower time.

    It's Polish penicillin.

    Nitrite plus salt in sausage.

Jimmy, How does this sound to you: Place a ring of my family kielbasa in the turkey's cavity and smoke it with the bird?  I normally put a quartered onion, a quartered apple and a sliced lemon in there.

Teach myself to weld or take courses at college?

I have a welding certificate and get along well with a low-tech "Buzz Box". Do they have B.O.C.E. in California?  Adult education night courses?  I reality, there isn't much to it, other than knack/control which comes with a little practice. Rod selection is basic as is output. If the rod...

    Nitrite plus salt in sausage.

Thank you for the input.  Here's one of my concerns: I poach my sausage. I do not boil it. I do not bake it. I hardly fry it. I always put the kielbasa in a skillet and add water half way up the side of the sausage. It is simmered....not boiled.....for a scant 8 minutes. Then it is turned to...

    Nitrite plus salt in sausage.

Enlighten me please. I have never used nitrites and nitrates in my sausage. Nitrate colours the sausage red????  Right??? Nitrite is colourless???  Right??? I do not want "red" fresh kielbasa. Cure #1 is nitrite???  Right??? Use 1/2 tsp per 10 lbs of meat???  Right??? How much salt will...

I'm trying to decide on the multiple Masterbuild smokers. This stuff is confusing

$159 and the MES analog 30 is all you need to make your day.  I've been smoking for 50 years and had tried every method. As for the "latest" MES???  There are promoters here for all models. That's why they make vanilla and chocolate. My MES 30 is all black. No useless window. No digital...

USDA Recommendations for thawing a Turkey

My MES analog 30 hits higher than 325 degrees. I understand the MES analog comes/came with differing coils. Mine is 1500 watt and I sealed the door with a fiberglass rope gasket. The well contained steam within, raises the temp too. Jimmy and I discussed this before. I can fast-track ribs @225...

USDA Recommendations for thawing a Turkey

What's not to understand?  It's exactly what our educated professional Chef Jimmy wrote to follow and why it's done.   I'm not a "chef"; I'm only an analytical chemist. Thanx Jimbo

USDA Recommendations for thawing a Turkey

"rinse", gets the residue off (especially salt) so it doesn't unduly effect the spices in the rub. "dry", gets the water/liquid off, so the oil that is applied with and before the rub, can penetrate. Otherwise, oil rises above water. Many spices are NOT water soluable and need oil to desolve...

USDA Recommendations for thawing a Turkey

Let me put this out there: regarding "Turkey thawed by the cold water method should be cooked immediately". O.k., so it is now thawed BUT it is brined for an additional 2 days... .then drained and patted dry but the brine is NOT rinsed off.... .then allowed to sit in the refrigerator for an...

    Turkey Prep.

Yo Jimmy! CORRECTION: (no glasses) 4 1/2 tbs kosher salt.......NOT 1 1/2 tbs  (didn't see the cross bar on the upright) AND  1 tbs garlic powder......NOT  1 tsp. As a by-the-by.....the recipe is tripled for a 14 lb bird in a 2 gal. zip lock bag.  You may have to bring it up with a little more...

    Turkey Prep.

Jimmy, I don't consider it "science" but vinegar (acid) breaks down protein a little. Here's my list from years of note taking:  Vinegars, lemon juice, apple juice, WHITE grape juice, FRESH pineapple juice, orange juice, papaya and SUGAR FREE soft drinks aid in breaking down protein.. Salt...
