For starters, the size of the fan depends on the size of your smoker, from there it's pretty much a matter of what kind of bells and whistles you want on it.

Congrats! I looked long and hard at the Kitchner before deciding on Cabelas.
I ground 2# of rib trimmings yesterday and could barely feed it fast enough.
More information would be helpful, how many do you cook for? What is your budget? do you want to babysit a smoker, set and forget, or in between?

I think it will outlast me and do more than I ever need it to, plus it has the 5 year warranty. I also considered the availability of parts and attachments.

I have to disagree with this.
I have a Big Steel Keg (same size as a large BGE) and a Cookshack FEPG1000. I have yet to find anything I can't cook on the pellet grill. While the BSK would be my go-to grill if the grid goes down, I don't think the pellet grills can be beat for all-around...

The Gander think didn't work out like I had hoped, so now back to square one. The good part is, I'm in no great hurry as I can "get by" with my wife's KA attachment for now.
Is there much practical difference between a #8 and #12 given the amount of meat we're talking about? I'm sure I'll have a better feel for them once I see them side by side. I've tried to research the difference but having had any luck.

They are a standard luer lock fitting, so most should work. We buy 16ga vet needles, they leave smaller holes in the meat so not as much injection comes back out.
Just be ready to explain to the clerk what you use them for
