    I’m back. Going to smoke brisket number two tomorrow. Costco prime whole packer 18lb trimmed to about 12. Last time I cooked at 225 and it took 18 hours. Going to do 250 this time.

    I let it sit for an hour and had a little bit while it was still warm. This was at midnight. I put it in the fridge and will heat some up today for dinner. :)

    lol it's 10:30 and it hit 192.1, but but it's been sloooooow going and it just regressed a bit to 191.9. I'm wondering if it's hitting the point of little return at 225 and I should toothpick it or bump to 250.

    Graphs of the two probes so far. It’s been a bit breezy so I turned the smoker a bit. I suspected the lower temp probe was getting affected by the wind as it is near the exhaust vent. I don’t think I’ve hit the 160 degree stall yet.

    My first time making pulled pork on my Louisiana Grill LG900

    My first long cook and it came out great! Good flavor and plenty for leftovers. I used mustard then put on some "Butt Rub" I had in the pantry. Cooked for 12 hrs at 240 with apple pellets.

    Thanks everyone for the replies. It seems the consensus is this cut is too lean to cook slow and low. What type of cooking style is this lean cut good for? i.e. what would you do with this cut if it was gifted to you?
