Hi everyone,
I picked up a pork shoulder in the vac pac a couple of weeks back when it was on sale. It's about time to open and cook. I got the smallest I could find. 12lbs.! Is it going to be one or two? Anyone know?
I have a bag of Lumberjack cayenne pepper pellets I plan to use to smoke it...
I was gifted a brisket from Snake River Farms. It arrived frozen and I put it in the chest freezer. How long should I plan for it to thaw in the fridge? Do you think it’s too late to thaw to smoke on the 23rd?
Follow up - This came out ok. The "burnt ends" weren't great as I avoid sugar and couldn't replicate the gooey sauce. They were coated with rub like the slabs, but the slabs turned out better. Next time I'll just do slabs and slice them. Appreciate the ideas!
Costco's Black Friday ad usually has the $8 off Pork Loin and $25 off prime NY whole loin. The latter was missing from the ad, but when I went to the warehouse, they had it in store. Of course I had to pick one up. Here in SoCal, this was $12.99/lb and I picked up at 13 lb. cut which came to a...
Costco has the Swift vacuum packaged boneless pork belly for $4.50 off today and I picked one up. I have never smoked one of these. I have done the smaller trimmed pork belly they sell in the styrofoam once. This piece is 9lbs (smallest I could find). Need some suggestions here. Should I smoke...
Apologies for the late response everyone, my email notifications went to junk. I thought no one had responded. :)
It was marked to move, at Costco, and my Foodsaver can frustrate me at times when vacuum sealing. Being Costco, I can return it without issue, but I wasn't going to come across this...
I picked up a LEM Maxvac Pro at Costco the other day. They have had them online for quite some time (https://www.costco.com/maxvac-pro-chamber-vacuum-sealer.product.100536866.html) and I never could get myself to pull the trigger. I have a Foodsaver that works alright, but as we all know the...
well, the cook went reasonably well with the exception of the grill fire going out 15 hours in. I went with cherry and oak with a bit of mesquite mixed in. Good bark and moist inside. Turned out great!
Thanks for the suggestions. Since the last two were likely mesquite and / or hickory, I think I'm going to try some oak mixed with some cherry.
How long will this brisket be good in this vac pak? The label doesn't say and the info sheet is a generic insert that says one week (same one I got...
I knew I had a gift coming, but wasn't expecting a brisket! 10lb'er trimmed. I guess I'll be cleaning the pellet grill tomorrow as my freezer is packed to the limit already!
This will be my third brisket and I can't remember what wood I used before. Probably mesquite or hickory. Fortunately I...
Hello,
Has anyone here upgraded from the Smoke to the Signals by Thermoworks? I have the Smoke and like it, but that gateway is a finicky thing that just gets me irritated. I forget what the status lights mean and last time it did not report anything to my app. Thinking of getting the Signals...
