one thig i think is importmant is TURN OFF GAS WHEN YOU PLACE TURKEY IN THE OIL SO YOU HAVE NO BOIL OVER PROBLEM. Than turn gas back on to bring temp back up
When you brine your turkey or chicken do you poke holes thru the skin so brine goes thru or just soak turkey or chicken in the brine without holes thru the skin?
What I would do is after ashes have cooled down (mabey pour water on to be sure) or wait 2 days with lid off use shop vac to remove the ashes.

These look good to me. I could not tell if If they are Pork ribs or Baby Back Ribs they should be cooked at diffrent times I think possible 3 hours-2.5 hours-.5 hours (Baby Backs time) .
Also I use about 1/4 cup Aple use in the foil stage. Reason I say this is you do not have much pull back...
