    when i had mine i didn't put in a baffle i just filled an aluminum roasting pan with water and put it tight against the firebox side and i never had a problem with temps unless the wind was howling.. i also rolled up a peice of flashing and shoved it in the stack to lower th exhaust to grate level

    here they are all done had them covered in the pan for an hour then placed them back on the racks and turned up the heat to about 300 and glazed with kikkoman sweet and sour basting sauce and they were to die for.. i didn't let them get to fall off the bone they had a little pull to them and...

    really warm here in PA. right around 90 and the ribs sure smell GREAT here they are ready to foil..i'll leave them in the roaster pan for this for 1 hour then put back on the racks for glazing with some sweet and sour sauce..also got whole taters and corn on the cob..moms bringing macoroni...

    sassafras wood question

    i have used alder and sassafras..the sassafrass is a wood that you should use use sparingly, as it is a pretty pundgent wood. it adds a good flavor especially to beef...as far as causing cancer standing around the smoker inhaling all that smoke gotta be worse than camel non filters
