Night before turkey prep and rubdown.
I'm be smoking my first bird tomorrow morning. It's a 14lb that should be thawed right about now. I'll be cooking in my MES at Max temp 275 with a 30 degree outside temp. How should I finish my late night butt smoke?
So I started smoking a 9 lb butt today around 11:00am. It's been wrapped in foil since 165F Current temp is 195F. I'm at 225F and I'd like to take it to 205. I gotta tell you, I'm so tired after working outside in the heat all day I can barely function. I suspect the shoulder will hit 205...- speedster1
