If It were me and granted that evryone has an opinion kind of like everyone has a bahookey. Keeping in mind the size of your bird I would smoke at 225 for 1.5 to 2 HRS. Then raise the temp to 325 baisting every 30 mins till it's done.

Something just came to mind. It's a pre cooked ham. So IT doesn't matter like starting with an uncooked ham. So long as it's warm enough to enjoy is all were really after. Nobody likes cold ham except in sandwiches. And there will be plenty of leftovers for that. :drool

I got a pre cooked ham and wanted to try a kajun style Rootbeer glaze on it. Am I going to get good results being it's pre cooked or is this a done deal and I should just warm it up in the oven?

I've got a lemon tree and wanted to know if I could use the trimmings for smoke in my cold smoke generator. Obviously mixed with other wood. I want to put it on in during a smoke but I was wondering if it would be like orange oil for termites but with people?
Has anyone tried to smoke with a citrus like lemon, orange or tangerine? I've heard that corn cobs produce a sweet smoke? :grilling_smilie:

It's great. I thought I was going to need a cold smoke generator to add smoke but it gets plenty of smoke. At least the chicken and my first two fatties that I smoked got plenty of smoke. We'll see when I smoke something else. I've got a pork butt in the freezer that's just it itchen to get...
