I'm sure the meat was enhanced it was one of those cryo packs from Smithfield. The next batch I will base just on time and pit temperature and see how they bend.
I do 80% unlit coals and 20% hot seems I have to add to it after 2 hours this is a side fire box also I used Hickory chunks and need to move them a few times to keep them smoking.
Ok it does seem like I over cooked a bit I think I'll try 2-2-.5 then test a piece. Regarding the marinade I was in tha frame of mind when I rubbed them the night before but worried I removed to much moisture as the salt content of the rub did pull at least cup if not more of liquid from the meat.

Although I don't need it but saw a Brinkmann Smoke King Deluxe in average condition on CL. They are asking $100 it appears to be a sister to the New Braunfels Bandera. Is this worth it can't find retail prices online so if anyone knows what these sold for and if they are any good I'd appreciate it.
While smoking on my Weber Kettle one morning my dad shows up after visiting a local yard sale with a Brinkmann Pittmaster Deluxe on the back of his truck.
The smoker had medium amount of rust but I was surprised by the weight of the Brinkmann compared to units currently sold at Home Depot etc...
