    Mopping frequency for Pork Butt

    Is there a scale vs cook time in regards to mopping frequency on Pork Butt etc. I have become a fan of basting/mopping (not spraying) my pork butts. I seem to get a better bark but have just followed every 45 min mopping time based on an old recipe. Any additional thoughts would be appreciated...

    You know if it was me I'd find a highly rated BBQ resturant and ask them to train you as the competition style isn't really geared for what you would make for yourself from what I understand. Maybe Skylight Inn in Ayden NC or Hill's BBQ in Lexington NC I bet you could pay them half what Myron...

    What is your secret rub ingredient?

    Cinnamon that's interesting that's what goes in skyline chili along with Chocolate. I bounce between a heavy sugar rub which has Brown, Turbinado, and regular rub less all the sugars. My secret ingredient would be Rosemary on occasion .

    I understand Florida BBq would be based on a specific style you may have one place doing Carolina, one doing Kansas City etc. if I was a native of Florida given the culture I would think semi Caribbean meets Jamaican Jerk.     Are you using it in the fire box before it turns white? I found better results by starting it in a chimney and wait till it turns white. I don't put any in the fire box while I have meat in the Pitt that isn't 90% white and got rid of that chemical taste.

    I will say when I added lexington style BBQ sauce to the pork carnitas I smoked I was told it was the best BBQ they had ever had. If I was doing a competition tomorrow that's what I'd try. I posted the carnitas recipe and lexington sauce in prior postings...good luck just don't over smoke focus...
